QUINOA, POTATO AND PARMESAN PATTIES

Ingredients:
1 cup cooked quinoa
1 1/2 steamed potato (white or sweet potato)
1/2 onion steamed and thinly diced
1/2 medium carrot grated
2 garlic cloves finely diced
1 egg
1.5 tbsp buckwheat flour
1/4 cup grated parmesan cheese
pepper to taste
In a large bowl, mash the steamed potato well, and combine with the quinoa, egg, onion, garlic, carrot, flour, cheese and pepper.
Mix ingredients until thoroughly combined and form mixture into your desired shape and size.
Place into a preheated frying pan with olive oil, over a medium heat and fry until brown on both sides and firm within.
Repeat this process until you have cooked each patty.
